Happy Easter!
Easter. My first holiday on the diet.
And I have a cold.
Saturday we had an Easter Egg hunt with my parents in the morning. I had my shake before we left and I brought egg whites with me. My mom served ham steaks, eggs, fruit salad and muffins. I had a little bit of the ham steak and my egg whites.
On Easter Sunday I made pancakes for Ian and Olivia and I made Crispy Cereal Pancakes. They weren't as good this time--I think I missed something. But they were good enough to fill me up. We didn't have to be anywhere until 4:30 so lunch was typical IP.
Dinner was ham, mac and cheese, brussel spouts prepared with shallots (shredded brussel sprouts, very yummy), artichokes, rolls, broccoli...I made asparagus in a lemon/oil/garlic sauce and mashed cauliflower. I had ham, broccoli, asparagus, mashed cauliflower and a little tasting of the brussel spouts.
For dessert my sister served cheesecake and berries. I'll admit, it looked really good. I brought Strawberry Wafers and had those with my decaf coffee. (A nice thing about my family is that we pretty much all prefer decaf at night so I didn't have to make a special request).
My only issue...is that I'm used to sitting on the couch at night and relaxing with a cup of tea and my IP snack...and I already ate it. Hmph. Oh well.
Overall it was a great weekend. I got to spend time with my family, see family I haven't seen in a while and for the first time in a long time, feel confident in my dressy clothes on a holiday.
And ya know what was nice? While some people were talking about how full they were, I felt very comfortable.
