What's for Dinner?
The broccoli and cauliflower rice are a staple in my diet. They're easy to prepare and a family favorite. Plus, I'm used to having a protein, a grain and a veggie...well, no more grains for me! Enter cauliflower "rice". And as it turns out, my husband now says he's not sure he could eat regular rice anymore.
My shrimp is just minced onion seasoning, sea salt, red curry, pepper and garlic--all to taste. I put one tiny drop of coconut extract in the pan to give it that coconut flavor that it normally had when I'd make it with coconut milk. This recipe also works with chicken, if you like curry. And to make it really yummy, I should have used green onions (scallions) but didn't have any on hand.
