Oatmeal Berry Muffins

So i tried out a recipe for Oatmeal Berry Muffins using IP Oatmeal and IP Wildberry Yogurt.  I found the recipe here.

My recipe made 9 mini muffins (well, 8 and a small one)...so I don't know if I stretched it or what...I ate 3.5 since the recipe says 6 would be 2 foods and that the recipe should make 6...



I'm not entirely sure how I feel about them.  They were kind of...rubbery.  They didn't have a cakey muffin texture all the way through.  It's not that they were chewy.  Have you ever put too much egg on your bread when making french toast?  So the bread gets really soggy and then when you cook it the toast becomes more eggy and less bready?  It's kinda like that but in muffin shape.

Here's the recipe as taken from IdealYouWeightLoss.com, which is also linked above.  They have some awesome recipes.  Not sure where their recipes comes from as I have seen a lot of them all over the different forums/IP websites.

Oatmeal Berry Muffin

Grease a mini muffin pan with oil and mix 1 pack Ideal Protein Maple Oatmeal with 1/4 teaspoon of baking powder. Add 1 pack of Ideal Protein Wildberry Yogurt, add 1 beaten egg, and add 1/4 cup water or until muffin consistency, mix carefully.
Spoon into pan until 3/4 full then bake at 350F until golden brown, about 10 minutes.
Eat alone and get bursts of berry in your mouth, or use an Ideal Protein Vanilla Pudding or Walden Farms Jams for a topping.
Makes 6 small muffins, the whole tray would be 2 IP foods or 3 if you have icing. Consume accordingly.
