Grilled Cheese and Tomato Soup!

No.  I haven’t figured out how to manufacture a grilled cheese out of IP packets.  But I have tried the Tomato & Basil Soup…and I must say that…surprisingly, it was really good.  Ok.  Maybe “really” is stretching it.

I used 8oz of water, shook it like crazy, nuked it for 1:30 and dipped my spoon in…and if I don’t take a second to savor the taste, it’s good!

I did dip a few pieces of celery in it about half way through, which was also good.  I’ve never had a V8, but I imagine that it has the same taste with celery.

So here we are at weigh in day.  In about 5 hours I will step on the scale to find out how my week went…

I stopped my antibiotics yesterday and the scale moved today.  I did nothing different yesterday or the day before to cause this to happen.  I honestly think it was the meds.  I guess tomorrow will be the true test.  If I lose again then it is to be expected that while on antibiotics, weight loss will come to a screeching halt.

That’s annnoooying!

So, so far so good.  Still craving things.  Last night I got home from work, late, and I was really having a hard time not launching into the carby things in the pantry.  My old habits (old, like 3 weeks ago) were to come home and as I was picking out the quinoa or whole grain pasta and veggies and other healthy items I was sustaining myself on mini peanut butter cups or a handful of nuts or something that, while small, was taking away from the fact that I was trying to eat healthily.

I persevered.  I made Tilapia with some sautéed onions and paprika and Old Bay (which I am not sure is on the diet but I’m pretty sure it was less than ¼ tsp) and Sea Salt.  Steamed some broccoli and seasoned with garlic, sea salt and pepper and a spray of Olive Oil to make it all stick.  (I love my MISTO sprayer)

We had an interesting night with the baby so my snack was late—If I closed my eyes and ignored the after taste, I’m pretty sure Mango drink is a pretty good diet sub for a Mango Lassi.  And let me tell you I am dying for some Chicken Korma, Basmati rice and Naan. Or some carbs on a bed of carbs and some carbs to dip into the coconutty carb sauce.

Snore.  IP needs to expand…or I need to figure out how to make an IP Korma sauce…hmm…I wonder if I could use one of the soups as a base…to get the creamy taste…add some curry…get some Miracle noodle rice…a little chicken…or a veggie korma…hmm…someone must have thought of this…

Time to browse the recipes again!

OK…still 5 hours ‘til weigh in…
